Description

Frozen banana snacks are a healthy, refreshing treat that combine the natural sweetness of bananas with peanut butter, dark chocolate, and a sprinkle of coconut. These guilt-free snacks are vegan, low-calorie, and a great alternative to sugary ice cream or candy.


Ingredients

3 ripe bananas (firm, not overripe)

4 tbsp crunchy peanut butter (or creamy peanut butter, almond butter, or cashew butter)

3 dark chocolate squares (about 1 oz)

¾ tsp coconut oil (can substitute butter)

2 tbsp shredded coconut (optional, or substitute with chopped nuts)


Instructions

  1. Peel the bananas, slice them in half, and then slice each half lengthwise, creating 12 banana quarters in total.
  2. Line a baking tray with parchment paper or use a large plate.
  3. Place the banana slices onto the lined tray.
  4. Spread a teaspoon of peanut butter over each banana slice.
  5. Break the dark chocolate into pieces and place it in a small bowl. Add coconut oil to the bowl and microwave in short bursts, stirring until fully melted.
  6. Pour the melted chocolate over the peanut butter-covered banana slices.
  7. Sprinkle shredded coconut over each slice (optional).
  8. Place the tray in the freezer for 1-2 hours until the snacks are completely frozen.
  9. Let the banana snacks warm up for a minute before eating to enhance the flavors.

Notes

  • Use almond butter, cashew butter, or sunflower seed butter as alternatives to peanut butter for different flavors.
  • If you’re not a fan of dark chocolate, you can opt for milk chocolate or even white chocolate for a lighter treat.
  • Instead of coconut, try topping with chopped nuts, granola, or dried fruit.
