Ingredients
12 oz New York strip steaks (about 1 1/4-inches thick)
1 Tbsp olive oil
1 tsp kosher salt
3/4 tsp freshly ground black pepper
3 Tbsp unsalted butter
2 garlic cloves, minced
Instructions
- Remove the steaks from the fridge about 30 minutes to 1 hour before cooking. Pat them dry with paper towels and season both sides with kosher salt.
- Heat a 12-inch cast iron skillet over medium heat. Add olive oil to the pan. Once the oil is near smoking, the pan is ready.
- Place the steaks in the hot skillet and cook for about 3 minutes per side or until a nice crust forms on the steaks.
- Reduce the heat to medium-low and add butter and minced garlic. Tilt the pan so the butter melts evenly, then spoon the butter mixture over the steaks.
- Flip the steaks again and check the internal temperature with a meat thermometer. For rare, it should be 125°F; medium-rare 135°F; medium 145°F; medium-well 150°F; well-done 160°F.
- Once the steaks reach your desired doneness, transfer them to plates and let them rest for 5 minutes before slicing and serving.
