Ingredients

12 oz New York strip steaks (about 1 1/4-inches thick)

1 Tbsp olive oil

1 tsp kosher salt

3/4 tsp freshly ground black pepper

3 Tbsp unsalted butter

2 garlic cloves, minced


Instructions

  1. Remove the steaks from the fridge about 30 minutes to 1 hour before cooking. Pat them dry with paper towels and season both sides with kosher salt.
  2. Heat a 12-inch cast iron skillet over medium heat. Add olive oil to the pan. Once the oil is near smoking, the pan is ready.
  3. Place the steaks in the hot skillet and cook for about 3 minutes per side or until a nice crust forms on the steaks.
  4. Reduce the heat to medium-low and add butter and minced garlic. Tilt the pan so the butter melts evenly, then spoon the butter mixture over the steaks.
  5. Flip the steaks again and check the internal temperature with a meat thermometer. For rare, it should be 125°F; medium-rare 135°F; medium 145°F; medium-well 150°F; well-done 160°F.
  6. Once the steaks reach your desired doneness, transfer them to plates and let them rest for 5 minutes before slicing and serving.

  • If you prefer a spicy kick, sprinkle some cayenne pepper or red pepper flakes on the steaks before cooking.
