Crispy, golden garlic herb roasted chicken thighs with a juicy and tender interior. Infused with aromatic herbs like rosemary and sage, this simple and flavorful recipe is perfect for any occasion.
Ingredients
4 chicken thighs with bone & skin
4–5 garlic cloves, peeled and slightly pressed so the flavors release
½ teaspoon sage (dried or fresh), chopped
¾ teaspoon rosemary (dried or fresh), chopped
¼ teaspoon garlic powder
Salt & black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken: Sprinkle salt and black pepper on both sides of the chicken thighs. Place the thighs in a baking pan, skin side up. Sprinkle the top of the thighs with garlic powder and chopped sage and rosemary. Arrange the garlic cloves around the chicken.
- Bake: Place the baking pan in the center rack of the oven. Roast the chicken uncovered for 45 minutes. Then, reduce the oven temperature to 325°F (165°C) and cook for an additional 10 minutes. The internal temperature of the chicken thighs should reach 165°F (75°C), and the skin should be golden and crispy.
- Keep Warm: To keep the chicken thighs warm before serving, turn off the oven and cover them with foil.

- Herb Variations: You can customize the herbs based on your preferences. Thyme, oregano, or an Italian seasoning blend work well too.
- Citrus Addition: Add lemon or orange zest and juice before baking for a fresh, citrusy flavor.
