Description

Garlic Parmesan Chicken Meatloaf is a lighter, Italian-inspired take on traditional meatloaf. Made with lean ground chicken, Parmesan cheese, and savory garlic, it’s moist, flavorful, and perfect for a cozy, satisfying dinner.

Ingredients

1 lb ground chicken

½ cup breadcrumbs

½ cup grated Parmesan cheese

1 egg

3 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper.
  3. Mix until just combined, being careful not to overwork the meat.
  4. Shape into a loaf on a lined or greased baking sheet, or place in a loaf pan.
  5. Bake for 45–50 minutes, or until internal temperature reaches 165°F (74°C).
  6. Let rest for 5–10 minutes before slicing and serving.

Notes

  • Add chopped onions or bell peppers for extra flavor and moisture.
  • Stir in red pepper flakes or hot sauce for a spicy kick.
  • Use almond flour or oats to make it gluten-free.
  • Top with ketchup and Dijon mix in the last 10 minutes for a tangy glaze.
  • Freeze in individual portions for quick future meals.
