Description

These Garlic Parmesan Chicken Skewers with a creamy ranch marinade are a delightful blend of smoky, savory, and cheesy flavors. Perfect for a quick weeknight meal or a crowd-pleasing appetizer at BBQs, the tender grilled chicken infused with garlic, parmesan, and ranch dressing is a guaranteed hit!

Ingredients

For the Marinade:

  • 1/2 cup ranch dressing (store-bought or homemade)
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried parsley (or fresh parsley, chopped)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)

For the Skewers:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Prepare the Marinade: In a bowl, combine ranch dressing, parmesan cheese, olive oil, garlic, parsley, pepper, garlic powder, and lemon juice. Mix well.
  2. Marinate the Chicken: Place chicken in a bag or dish, pour marinade over, coat well, seal, and refrigerate for 30 minutes to 2 hours.
  3. Prepare the Skewers: Thread marinated chicken onto skewers with space between each piece. If using wooden skewers, soak in water for 15 minutes.
  4. Grill the Chicken: Preheat grill to medium-high. Grill skewers for 10-15 minutes, turning occasionally until chicken reaches 165°F (75°C) internal temperature.
  5. Serve and Garnish: Let skewers rest, garnish with parsley or parmesan, and serve with sides or sauces.

Notes

  • Use chicken thighs for more juiciness.
  • Adjust seasonings to taste with more garlic, rosemary, or thyme.
  • Avoid excessive skewer movement for perfect grill marks.
