Description
Golden-Baked Parmesan Zucchini Rounds are a healthy, crispy snack or side dish made with zucchini slices coated in a savory Parmesan-breadcrumb mixture, then baked to golden perfection. These rounds offer a delicious combination of crunch and tenderness in every bite.
Ingredients
2 medium zucchinis
1 cup grated Parmesan cheese
1 cup breadcrumbs (panko or regular)
1 tsp garlic powder
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
1 egg
1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Slice the zucchinis into rounds, about 1/4-inch thick. Set aside.
- In a shallow bowl, beat the egg. In another bowl, mix the grated Parmesan, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Dip each zucchini slice into the beaten egg, then coat it with the Parmesan-breadcrumb mixture. Press gently to ensure the coating sticks well.
- Arrange the coated zucchini rounds in a single layer on the prepared baking sheet.
- Drizzle a little olive oil over the zucchini rounds for added crispiness.
- Bake for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
- Once done, remove from the oven and let them cool for a few minutes before serving.
Notes
- Spicy Zucchini Rounds: Add red pepper flakes to the breadcrumb mixture for extra heat.
- Cheesy Twist: Mix in shredded mozzarella for an extra cheesy flavor.
- Herb-Infused: Try using thyme, rosemary, or basil to vary the flavor.
- Gluten-Free: Use gluten-free breadcrumbs to make this dish suitable for those with dietary restrictions.
