Ingredients
Fresh sweet corn kernels (from 2–3 ears)
4 cups shredded cabbage
1 cup halved cherry tomatoes
1 diced yellow bell pepper
1 cup shredded carrots
Micro herbs or fresh herbs (optional)
Sweet Corn Vinaigrette:
Extra sweet corn kernels (from 1 ear)
¼ cup olive oil
2 tbsp vinegar (apple cider or white wine)
1 tsp Dijon mustard
1 tbsp honey or maple syrup
Salt and pepper to taste
Instructions
- In a large bowl, combine corn kernels, shredded cabbage, cherry tomatoes, bell pepper, carrots, and herbs.
- In a blender, combine extra corn kernels, olive oil, vinegar, Dijon mustard, honey or maple syrup, salt, and pepper. Blend until creamy.
- Taste the dressing and adjust seasoning as needed.
- Pour vinaigrette over the salad and toss to coat evenly.
