Description

This Autumn Harvest Chicken Skillet is a cozy, one-pan dinner filled with tender chicken breasts, roasted sweet potatoes, crisp apples, and a savory maple Dijon glaze. It offers a perfect balance of sweet, savory, and hearty fall flavors, and can be prepared in under 40 minutes, making it an ideal weeknight meal.

Ingredients

Chicken and Seasoning

  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste

Vegetables and Fruits

  • 1 sweet potato, peeled and diced
  • 1 apple, cored and sliced (Honeycrisp or Fuji works well)
  • ½ red onion, sliced
  • 1 cup Brussels sprouts, halved

Glaze and Flavorings

  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • ½ cup low-sodium chicken broth

Instructions

  1. Season & Sear Chicken: Season the chicken breasts evenly with salt and black pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear each side for 4 to 5 minutes until golden brown. Remove the chicken from the skillet and set aside.
  2. Cook Vegetables: In the same skillet, add 2 tablespoons of butter, the diced sweet potato, sliced red onion, and halved Brussels sprouts. Sauté these vegetables for 6 to 8 minutes until they start to soften and develop a slight caramelization.
  3. Add Apples & Glaze: Stir in the apple slices along with 2 tablespoons maple syrup, 1 tablespoon Dijon mustard, 1 teaspoon fresh thyme, and 1 teaspoon fresh rosemary. Continue cooking for 2 to 3 minutes to allow the glaze to evenly coat the vegetables and apples.
  4. Combine & Simmer: Return the seared chicken breasts to the skillet, nestling them among the vegetables. Pour in ½ cup low-sodium chicken broth and cover the skillet with a lid. Reduce the heat to low and simmer for 10 minutes, or until the chicken is fully cooked through and the vegetables are tender.
  5. Serve: Spoon the maple-Dijon glaze over the chicken and vegetables before serving. Optionally, garnish with fresh herbs such as thyme or rosemary for added aroma and appearance.

Notes

  • Substitute chicken thighs for a richer, more flavorful result.
  • Add a pinch of cinnamon or nutmeg to the glaze for extra warmth and depth of fall flavors.
  • This dish pairs beautifully with wild rice or quinoa for a complete meal.
  • For a dairy-free version, omit the butter or substitute it with coconut oil.
