Ingredients

2 chicken breasts, sliced into strips

8 oz pasta (penne or fettuccine)

2 cups mushrooms, sliced

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 tbsp olive oil

2 cloves garlic, minced

1/2 cup chicken broth

Salt and pepper to taste

Fresh parsley for garnish


Instructions

  1. Start by cooking your pasta according to the package directions. Once it’s cooked, drain it and set it aside.
  2. In a large skillet, heat up the olive oil over medium heat. Add the chicken strips and cook them until they turn golden brown and are fully cooked through, about 7 to 8 minutes. Once done, set the chicken aside.
  3. In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 5 minutes until the mushrooms are tender and soft.
  4. Pour in the chicken broth and bring it to a simmer. Let it reduce by half, which should take around 3 to 4 minutes.
  5. Stir in the heavy cream and grated Parmesan cheese. Let the sauce cook for an additional 2 minutes until it thickens.
  6. Add the cooked pasta and chicken back into the skillet, ensuring everything is well-coated with the sauce. Season with salt and pepper to taste.
  7. Serve hot and garnish with fresh parsley.
