Instructions

  1. Activate Yeast: In a medium bowl, combine the warm water, packet of active dry yeast, and sugar. Stir gently and let the mixture sit for 5 minutes until it becomes frothy, indicating the yeast is active.
  2. Make Dough: Add the all-purpose flour, olive oil, and salt to the yeast mixture. Mix together until a soft dough forms, then turn it out onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.
  3. First Rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  4. Shape Dough: Lightly grease a baking pan and press the risen dough evenly into the pan to form the focaccia base.
  5. Add Jam Filling: Spoon the jam evenly in dollops over the surface of the dough. Gently press the jam into the dough without breaking the surface, ensuring it is embedded.
