Instructions
- Activate Yeast: In a medium bowl, combine the warm water, packet of active dry yeast, and sugar. Stir gently and let the mixture sit for 5 minutes until it becomes frothy, indicating the yeast is active.
- Make Dough: Add the all-purpose flour, olive oil, and salt to the yeast mixture. Mix together until a soft dough forms, then turn it out onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.
- First Rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
- Shape Dough: Lightly grease a baking pan and press the risen dough evenly into the pan to form the focaccia base.
- Add Jam Filling: Spoon the jam evenly in dollops over the surface of the dough. Gently press the jam into the dough without breaking the surface, ensuring it is embedded.
- Second Rise: Cover the pan loosely and allow the dough to rise again for 20 minutes to puff lightly.
- Bake: Preheat your oven to 190°C (375°F). Bake the focaccia for 20 to 25 minutes or until the top is golden brown and cooked through.
- Finish and Serve: Remove focaccia from the oven and while still warm, sprinkle generously with extra sugar to give it a sweet, donut-like finish. Slice and serve warm for the best taste and texture.
