Description
A classic comfort chicken soup featuring tender shredded chicken and fresh vegetables simmered in a savory broth, topped with fluffy homemade dumplings for a warm, satisfying meal.
Ingredients
Soup
- 2 cups cooked chicken, shredded
- 1 tbsp butter
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk
- Salt & pepper to taste
Dumplings
- 1 cup flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ cup milk
- 2 tbsp butter, melted
Instructions
- Sauté Vegetables: Melt butter in a pot over medium heat, then add diced onion, chopped carrots, and chopped celery. Sauté until vegetables are tender and fragrant, about 5-7 minutes.
- Add Broth and Chicken: Pour in the chicken broth and add the shredded cooked chicken. Bring the soup to a gentle simmer and let it cook for about 10 minutes to meld the flavors.
- Prepare Dumpling Dough: In a separate bowl, combine the flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms.
- Add Dumplings to Soup: Drop spoonfuls of the dumpling dough carefully into the simmering soup, spacing them evenly.
- Cook Dumplings: Cover the pot with a lid and cook for 12-15 minutes without lifting the lid, allowing the dumplings to steam and become fluffy and cooked through.
- Finish Soup: Stir in the remaining 1 cup of milk, season the soup with salt and pepper to taste, and gently mix to combine. Serve hot.
Notes
- Do not lift the lid while the dumplings are cooking; this allows steam to properly cook and fluff them.
- Consider adding fresh herbs like thyme or parsley for additional flavor.
- Use homemade or store-bought chicken broth depending on preference and availability.
