Ingredients
8–10 long carrots, peeled
2 1/2 Tbsp olive oil
1/4 cup honey
1/4 teaspoon salt
1/8 tsp pepper
Fresh thyme (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel the carrots and cut them into your desired length and thickness.
- Place the carrots in a baking dish.
- Drizzle olive oil and honey over the carrots. Sprinkle with salt and pepper, and toss until the carrots are evenly coated.
- Bake for 40–60 minutes, depending on your preferred doneness. 40 minutes will give you softer carrots with a slight crunch, while 60 minutes will result in completely soft carrots.
- Garnish with fresh thyme leaves, and add extra salt and pepper if desired.
- Serve and enjoy!
