Description

Honey Mustard Chicken Tenders are coated in a tangy honey mustard marinade, then rolled in crispy cornflake crumbs, offering a delicious, healthier alternative to fried chicken. Perfect for a quick dinner or snack.


Ingredients

2 tablespoons plain nonfat Greek yogurt

2 tablespoons mustard (yellow mustard, Dijon, or brown mustard)

1 tablespoon honey

1 tablespoon light mayonnaise

1.25 lbs raw boneless skinless chicken breast tenderloins (or breasts cut into strips)

⅔ cup cornflake crumbs

1 teaspoon dry mustard powder

½ teaspoon dried parsley flakes

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper


Instructions

  1. In a mixing bowl, combine Greek yogurt, mustard, honey, and mayonnaise. Stir until fully combined. Add chicken tenderloins to the bowl and coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 24 hours.
  2. In a shallow dish, mix together cornflake crumbs, dry mustard, parsley, paprika, salt, and pepper.
  3. Coat each chicken strip by pressing it into the cornflake crumb mixture, flipping to coat both sides.
  4. Air Fryer: Place coated tenders in the air fryer basket in a single layer. Lightly mist with cooking spray. Set air fryer to 390°F and cook for 5-6 minutes. Flip and cook for another 5-6 minutes, until fully cooked and golden.
  5. Oven: Preheat oven to 375°F. Line a baking sheet with parchment paper. Arrange coated chicken tenders and lightly spray with cooking spray. Bake for 18-20 minutes or until fully cooked and crispy.
