Description

Tender and flavorful beef short ribs cooked effortlessly in an Instant Pot with aromatic garlic, rich beef broth, and fragrant herbs. This recipe delivers a hearty, melt-in-your-mouth meal in a fraction of traditional cooking time, perfect for a comforting dinner.

Ingredients

Beef Short Ribs

  • 3 pounds beef short ribs
  • Salt and pepper to taste

Sauté

  • 1 tablespoon oil
  • 1 onion, chopped
  • 3 cloves garlic, minced

Liquid and Seasoning

  • 1 cup beef broth
  • 1/4 cup soy sauce or Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme

Instructions

  1. Season the Ribs: Generously season the beef short ribs with salt and pepper on all sides to enhance their natural flavor.
  2. Sear the Ribs: Set the Instant Pot to sauté mode, add the oil, and sear the short ribs in batches until all sides are browned. Remove and set aside to retain juices and flavor.
  3. Sauté Onions and Garlic: In the same pot, add chopped onion and minced garlic to the residual oil and brown bits, sautéing until fragrant and translucent.
  4. Add Liquids and Herbs: Pour in the beef broth, soy sauce (or Worcestershire sauce), tomato paste, and sprinkle the thyme evenly, stirring to combine and deglaze the pot.
  5. Pressure Cook the Ribs: Return the seared ribs to the Instant Pot, ensuring they are partially submerged in the liquid. Secure the lid and cook on high pressure for 45 minutes to tenderize the meat perfectly.
  6. Release Pressure: Allow the pressure to naturally release for 10 minutes, then do a quick release to safely open the pot.
  7. Serve: Remove the ribs and serve them with the flavorful cooking liquid as gravy alongside your favorite sides.

Notes

  • For a thicker gravy, mix cornstarch with a little cold water to create a slurry and stir into the hot cooking liquid, simmering briefly to thicken.
  • Short ribs taste even better when prepared a day in advance because the flavors meld as the dish rests.
