Description
A creamy, cheesy chicken dish inspired by jalapeño poppers, packed with bold flavor and a slight spicy kick, perfect for an easy and delicious weeknight dinner.
Ingredients
Chicken
- 2 chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
Sauce
- 3 jalapeños, sliced
- 3 cloves garlic, minced
- 150 g cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup chicken broth
- 1/2 tsp paprika
Toppings & Garnish
- 1/4 cup cooked bacon bits
- Fresh parsley for garnish
Instructions
- Season Chicken: Season the chicken breasts evenly with salt and pepper on both sides to enhance their flavor.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side depending on thickness. Remove from pan and set aside.
- Sauté Jalapeños and Garlic: In the same pan, add sliced jalapeños and minced garlic. Sauté until fragrant and jalapeños soften, about 2-3 minutes.
- Prepare Sauce: Add the cream cheese, shredded cheddar cheese, chicken broth, and paprika to the pan. Stir continuously until the cheeses melt and the sauce becomes smooth and creamy.
- Coat Chicken: Return the cooked chicken breasts to the skillet, spooning the sauce over them to coat thoroughly.
- Add Bacon and Simmer: Sprinkle cooked bacon bits on top of the chicken. Let everything cook together for an additional 2-3 minutes to warm the bacon and allow flavors to meld.
- Garnish and Serve: Sprinkle fresh parsley over the dish before serving. Serve hot with your choice of sides such as rice, pasta, or roasted vegetables.
Notes
- Remove jalapeño seeds prior to cooking for a milder heat level.
- This dish pairs excellently with rice, pasta, or roasted vegetables to complete the meal.
- You can adjust the number of jalapeños based on your desired spice tolerance.
