Ingredients

1½ cups graham cracker crumbs

¼ cup granulated sugar

6 tablespoons butter, melted

8 oz full‑fat cream cheese, softened

1 cup powdered sugar

2 teaspoons vanilla extract

2 cups Cool Whip, thawed (divided)

3 tablespoons lime JELL-O powder

½ cup boiling water

1 box (3.4 oz) instant white‑chocolate pudding mix

1 cup half‑and‑half

½ cup freshly squeezed key‑lime juice

1 tablespoon key‑lime zest

2 cups additional Cool Whip (for topping)

Extra graham cracker crumbs and lime zest, for garnish


Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter. Press into an 8×8″ pan to form the crust. Chill while preparing the layers.
  2. Beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in 2 cups of Cool Whip. Spread evenly over the crust.
  3. Dissolve lime JELL-O powder in boiling water. In a separate bowl, whisk white chocolate pudding mix with half-and-half until thickened.
  4. Stir in lime juice and zest, then gradually mix in the JELL-O. Fold in 1½ cups Cool Whip and pour over the cheesecake layer.
  5. Spread the remaining Cool Whip evenly on top. Garnish with extra graham cracker crumbs and lime zest.
  6. Cover and refrigerate for at least 4–6 hours, preferably overnight.
  7. Slice into squares and serve chilled.
