Description
Kofta Kebab is a Mediterranean favorite made from a mixture of ground beef and lamb, seasoned with aromatic spices, and grilled to perfection. Served with pita bread, tahini sauce, and fresh veggies, this dish is perfect for any occasion.
Ingredients
1 medium yellow onion, quartered
2 garlic cloves
1 whole bunch parsley, stems removed (about 2 packed cups parsley leaves)
1 lb ground beef
1/2 lb ground lamb
1 slice of bread, toasted and soaked in water until tender
Salt and pepper, to taste
1 1/2 tsp ground allspice
1/2 tsp cayenne pepper
1/2 tsp ground green cardamom
1/2 tsp ground sumac
1/2 tsp ground nutmeg
1/2 tsp paprika
Pita bread, to serve
For the Fixings: Tahini sauce, tomato wedges, onion wedges, more parsley
Instructions
- Soak 10 wooden skewers in water for 30 minutes to 1 hour. Preheat the grill to medium-high heat for 20 minutes.
- In a food processor, chop onion, garlic, and parsley. Add beef, lamb, soaked bread, and spices. Process into a pasty mixture.
- Form the meat mixture into cylindrical shapes about 1 inch thick on the skewers.
- Grill the kebabs for 4 minutes on one side, then flip and grill for another 3-4 minutes until fully cooked and internal temperature reaches 160°F.
- Rest for 5 minutes, then serve with pita bread, tahini sauce, tomato wedges, onion wedges, and extra parsley.
Notes
- For a gluten-free version, omit the bread or substitute with gluten-free breadcrumbs.
- If you prefer a spicier kebab, add extra cayenne pepper or red pepper flakes to the meat mixture.
- You can substitute lamb with chicken or beef for a different flavor profile.
- To make ahead, prepare the meat mixture and refrigerate for up to 24 hours before grilling.
