Ingredients
1 cup (226 g) unsalted butter, softened
¾ cup (150 g) granulated sugar
2 tablespoons fresh lemon zest
2 cups (250 g) all-purpose flour
2 tablespoons cornstarch
½ teaspoon salt
1 ¾ cups (220 g) powdered sugar (for icing)
2 tablespoons fresh-squeezed lemon juice (for icing)

Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, sugar, and lemon zest using an electric mixer until light and fluffy.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- Scoop the dough into 1-tablespoon-sized balls and roll them gently between your palms to form smooth balls. Place them on the prepared baking sheet, spacing them at least 2 inches apart.
- Bake the cookies in the preheated oven for 8–10 minutes, or until they are just slightly golden around the edges.
- Once baked, immediately flatten each cookie lightly using a clean flat surface, like a measuring cup or glass.
- Let the cookies cool completely before icing.
- For the Lemon Icing: In a small mixing bowl, whisk together the powdered sugar and lemon juice until smooth. If the mixture is too thick, add more lemon juice; if it’s too thin, add more powdered sugar.
- Spoon a small amount of icing onto each cooled cookie and spread it evenly using the back of the spoon. Garnish with lemon zest, if desired.
- Allow the icing to firm up before serving.
