Instructions
Cut the chicken: Slice the chicken breasts in half horizontally to create thinner pieces.
Mix the seasoning: In a small bowl, combine arrowroot powder (or flour), lemon pepper seasoning, and salt.
Season the chicken: Sprinkle the seasoning evenly over both sides of the chicken and press it in with your hands to coat the chicken thoroughly.
Cook the chicken: Heat the olive oil in a large pan over medium-high heat. Add the chicken and sear for 3 to 4 minutes on one side, then flip and cook for another 3 to 4 minutes or until an instant-read thermometer reads 160-165°F. Remove the chicken and set it aside on a plate.
Make the sauce: In the same pan, add the butter and sauté the minced garlic for about 30 seconds. Add the chicken broth and lemon juice, and reduce the sauce for 1-2 minutes, allowing it to thicken slightly.
