Description

Marinated Cucumbers, Onions, and Tomatoes is a quick, no-cook summer salad packed with fresh vegetables and vibrant flavors. Tossed in a tangy herb vinaigrette, this healthy, make-ahead side dish is ideal for picnics, potlucks, or meal prep.


Ingredients

2 English cucumbers, sliced into ¼-inch rounds

1 pint cherry tomatoes, halved

1 medium red onion, thinly sliced

½ cup apple cider vinegar

¼ cup olive oil

1 tablespoon sugar

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried Italian herbs

¼ teaspoon red pepper flakes (optional) 


Instructions

Wash and prep the cucumbers, tomatoes, and onion.

In a mixing bowl, whisk together the vinegar, oil, sugar, salt, pepper, herbs, and red pepper flakes.

Place the veggies in a large bowl or mason jar and pour in the marinade.

Toss or stir to coat evenly.

Cover and refrigerate for at least 2 hours or overnight.

Stir occasionally to redistribute the marinade.

Serve chilled.

Notes

Use a glass container to avoid reactions with vinegar.

Ensure vegetables are mostly submerged in marinade.

Tastes even better the next day – great for make-ahead meals.
