Description
This “Marry Me” chicken soup combines tender chicken, sun-dried tomatoes, garlic, herbs, and cream in a luscious broth with pasta for the ultimate comfort food. Rich, flavorful, and so good you’ll want to make it again and again!
Ingredients
Chicken:
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts (or thighs), diced
- Salt and black pepper, to taste
Soup Base:
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 8 oz short pasta (penne, rotini, or small shells)
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
Garnish:
- Fresh basil, for garnish
Instructions
- Prepare Chicken: Heat olive oil in a large pot, season and sear chicken until lightly golden. Set aside.
- Sauté Aromatics: In the same pot, sauté onion until softened. Add garlic, Italian seasoning, and red pepper flakes; cook briefly.
- Add Liquid and Pasta: Stir in chicken broth, cream, sun-dried tomatoes, and pasta. Simmer until pasta is tender.
- Finish Soup: Return chicken to the pot and simmer until fully cooked. Stir in Parmesan and spinach until wilted and creamy.
- Season and Garnish: Adjust seasoning, garnish with basil, and extra Parmesan before serving.

- For a lighter soup, use half-and-half or evaporated milk instead of cream.
