Description

This “Marry Me” chicken soup combines tender chicken, sun-dried tomatoes, garlic, herbs, and cream in a luscious broth with pasta for the ultimate comfort food. Rich, flavorful, and so good you’ll want to make it again and again!

Ingredients

Chicken:

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts (or thighs), diced
  • Salt and black pepper, to taste

Soup Base:

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 8 oz short pasta (penne, rotini, or small shells)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Garnish:

  • Fresh basil, for garnish

Instructions

  1. Prepare Chicken: Heat olive oil in a large pot, season and sear chicken until lightly golden. Set aside.
  2. Sauté Aromatics: In the same pot, sauté onion until softened. Add garlic, Italian seasoning, and red pepper flakes; cook briefly.
  3. Add Liquid and Pasta: Stir in chicken broth, cream, sun-dried tomatoes, and pasta. Simmer until pasta is tender.
  4. Finish Soup: Return chicken to the pot and simmer until fully cooked. Stir in Parmesan and spinach until wilted and creamy.
  5. Season and Garnish: Adjust seasoning, garnish with basil, and extra Parmesan before serving.

Notes

  • For a lighter soup, use half-and-half or evaporated milk instead of cream.
  • Swap pasta for rice or gnocchi for a fun variation.
  • Add mushrooms or zucchini for extra veggies.
  • This soup thickens as it sits—add more broth when reheating.
