Ingredients
100 g (½ cup) butter
150 g (1 cup) plain flour (all-purpose)
2 teaspoons baking powder
50 g (¼ cup) caster sugar
1 teaspoon vanilla extract, optional
50 g (1 ¾ oz) dark or milk chocolate, melted (for serving, optional)
Instructions
- Preheat your oven to 180°C (160°C fan) or 350°F (320°F if using a fan oven). Lightly butter or line two baking trays with parchment paper.
- In a bowl, use an electric whisk to soften the butter. Gradually add the sugar and continue to beat until the mixture is light and fluffy.
- Add the flour and baking powder, mixing until a dough forms. Stir in the vanilla extract if using.
- Roll the dough into 16 walnut-sized balls and place them on the prepared trays, spacing them about 5 cm apart.
- Dip a fork in water and gently press down on each ball to flatten it.
- Bake for 15-20 minutes, or until they turn a very pale golden color.
- Transfer the biscuits to a wire rack to cool completely.
- For the optional chocolate drizzle: Melt the chocolate in the microwave and drizzle over the cooled biscuits. Let the chocolate set for about 30 minutes before serving.
Notes
- For a dairy-free version, substitute butter with margarine or dairy-free butter.
- Add a teaspoon of cinnamon or cocoa powder to the dough for extra flavor.
- If you prefer, replace the plain flour with self-raising flour and omit the baking powder.
