This Mediterranean Ground Beef Skillet is a vibrant one-pan meal featuring juicy ground beef, sautéed onions, zucchini, cherry tomatoes, and crumbled feta—finished with fresh parsley for a bright touch.
Ingredients
500 g ground beef
1 medium zucchini, sliced
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 small yellow onion, sliced
2 cloves garlic, minced
100 g feta cheese, crumbled
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried oregano
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté the red and yellow onions until softened, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Push the onions aside and add the ground beef. Season with salt, pepper, and oregano. Break it apart and cook until browned.
- Stir in zucchini and cherry tomatoes. Cook for another 5–7 minutes until vegetables are just tender.
- Turn off the heat and sprinkle crumbled feta on top, allowing it to warm slightly.
- Garnish with chopped parsley and serve directly from the skillet.

- Add bell peppers or mushrooms for more veggies.
