Description

This Mexican Lasagna Breakfast Casserole is a bold, layered breakfast bake packed with eggs, sausage, tortillas, cheese, and classic Mexican flavors. Perfect for brunch, holidays, or meal prep, it can be made ahead for easy mornings and combines a hearty blend of savory ingredients into a comforting, flavorful dish.

Ingredients

Sausage and Tortilla Layer

  • 1 lb breakfast sausage (or chorizo)
  • 6 small flour or corn tortillas, cut into quarters

Egg Mixture

  • 8 large eggs
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cumin
  • ½ teaspoon chili powder

Additional Ingredients

  • 1 (10 oz) can diced tomatoes with green chiles, drained
  • 1½ cups shredded Mexican-blend cheese
  • ½ cup shredded cheddar cheese
  • Cooking spray or butter for greasing

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.
  2. Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked through. Drain any excess grease and set aside.
  3. Mix Eggs and Seasoning: In a mixing bowl, whisk together the eggs, milk, salt, black pepper, cumin, and chili powder until well combined and slightly frothy.
  4. Layer the Casserole: Start by layering one-third of the quartered tortillas evenly across the bottom of the prepared baking dish. Top with half of the cooked sausage, half of the drained diced tomatoes with green chiles, and one-third of the shredded Mexican-blend and cheddar cheeses mixed together.
  5. Repeat Layers: Add another layer using one-third of the tortillas, the remaining sausage, remaining diced tomatoes, and another third of the cheese blend.
  6. Finish Layering: Complete with a final layer of the remaining tortillas on top.
  7. Add Egg Mixture and Cheese: Pour the whisked egg mixture evenly over the entire casserole, ensuring it seeps between layers. Sprinkle the remaining cheese blend evenly over the top.
  8. Bake: Place the casserole in the preheated oven and bake uncovered for 40 to 45 minutes, or until the center is set and the top has turned a golden brown.
  9. Rest and Serve: Remove from the oven and let the casserole rest for 10 minutes to firm up for easier slicing and serving.

Notes

  • Add black beans or corn to the layers for extra texture and flavor.
  • Swap breakfast sausage for bacon or ground beef as preferred.
  • Serve warm with toppings like salsa, sour cream, avocado, or hot sauce for added zest.
  • For convenience, assemble the casserole the night before, cover it tightly, and refrigerate until ready to bake.
