Description

This Mexican Shrimp Cocktail (Cóctel de Camarón) is a refreshing and flavor-packed dish that combines succulent shrimp with bright, tangy vegetables and a delightful blend of seasonings. Ingredients

1/3 cup Spanish onion, chopped

1/4 cup fresh lime juice

1 lb cooked medium shrimp (peeled, deveined, tails removed)

2 roma tomatoes, chopped

1 cucumber, finely chopped

1 stalk celery, finely chopped

1 jalapeño, seeded & finely chopped

2 tsp salt

2 tsp ground black pepper

1½ cups chilled tomato & clam juice cocktail (like Clamato)

1 cup chilled ketchup

1 bunch cilantro, leaves chopped

2 tbsp hot pepper sauce (adjust to taste)

2 ripe avocados, peeled, pitted & chopped


Instructions

  1. In a bowl, combine the chopped onion with lime juice. Let the mixture sit for 5–10 minutes to mellow the bite of the onion.
  2. Add the shrimp, tomatoes, cucumber, celery, jalapeño, salt, and pepper. Stir gently to combine.
  3. Pour in the tomato-clam juice and ketchup. Mix well to ensure everything is evenly coated.
  4. Stir in the chopped cilantro and hot sauce, adjusting the level of heat to your preference.
  5. Gently fold in the avocado just before serving to prevent it from mashing.
  6. Chill the cocktail for 30 minutes for the best flavor or serve immediately for a fresh, bold taste.

Notes

Spice Level: If you want a milder version, reduce the amount of jalapeño or omit the hot pepper sauce.

Vegan Option: Replace the shrimp with chopped grilled tofu or chickpeas for a vegetarian twist.

Additional Veggies: Feel free to add diced bell peppers or corn for more color and texture.

No Tomato-Clam Juice: You can substitute the tomato-clam juice with just tomato juice, though it might lack the unique depth of flavor from the clam juice.
