  • 2 large eggs
  • 1 egg yolk
  • 40 g grated Parmesan cheese

  • 100 g pancetta or bacon, diced
  • 1 garlic clove, minced


Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente, about 8-10 minutes. Reserve 1/2 cup of the pasta cooking water before draining the pasta.
  2. Prepare the egg mixture: In a bowl, whisk together the 2 large eggs, 1 egg yolk, 40 g grated Parmesan cheese, 1 tablespoon white miso paste, and black pepper to taste until smooth and well combined.
  3. Cook the pancetta: In a large pan over medium heat, cook the diced pancetta or bacon until crispy, about 5-7 minutes. Add the minced garlic and sauté for about 30 seconds to release the aroma without burning it.
  4. Toss the pasta: Add the drained spaghetti to the pan with the pancetta and garlic, tossing well to coat the pasta in the rendered fat.
