Description

These no bake caramel brownies are rich, fudgy, and made with wholesome ingredients like dates, nuts, and almond butter. Topped with a gooey salted caramel layer, they’re gluten-free, refined sugar-free, and ready in just 15 minutes. A decadent yet healthy dessert that melts in your mouth!


Ingredients

For the Brownie Layer:

1 ½ cups pitted medjool dates (soft)

1 cup walnuts

½ cup hazelnuts

⅓ cup cocoa powder

For the Salted Caramel Layer:

½ cup almond butter

¼ cup maple syrup

1 tablespoon almond milk

1 tablespoon coconut oil

¼ teaspoon sea salt


Instructions

Make the Brownie Base:

Add dates, walnuts, hazelnuts, and cocoa powder to a food processor.

Blend until a brownie-like consistency forms.

Press firmly into a lined loaf pan.

Prepare the Caramel Layer:

In a small bowl, stir together almond butter, maple syrup, almond milk, coconut oil, and sea salt until smooth.

Pour over the brownie base and spread evenly.

Set and Serve:

Place in the freezer for about 1 hour until firm.

Sprinkle with flaky sea salt, slice into 10–12 squares, and enjoy.

Notes

Use soft pitted medjool dates for best results. If dates are firm, soak them in warm water for 5–10 minutes, drain, then use.

Store brownies in the freezer for the best texture.
