Description

These No Bake Peanut Butter Oat Bars are a delicious, easy-to-make treat with a crunchy texture, sweet peanut butter flavor, and a chocolate topping. Perfect for a snack or dessert.

Ingredients

3 cups (660g) peanut butter, smooth

1 cup (320g) honey

1/2 tsp salt

1 tsp vanilla extract

4 cups (480g) quick oats

2 cups (320g) semi-sweet chocolate chips

2 1/2 tbsp (35g) unsalted butter

Instructions

  1. Spray or line a 9×13-inch pan with parchment paper, leaving some overhang for easy removal.
  2. In a large saucepan, combine peanut butter, honey, and salt. Heat over medium-low heat until melted, stirring occasionally for about 2 minutes.
  3. Remove from heat, stir in vanilla extract, and then add oats, mixing until fully combined.
  4. Pour the mixture into the prepared pan. Spread evenly with a spatula, being careful not to press too hard.
  5. In a microwave-safe bowl, combine chocolate chips and butter. Heat in 30-second intervals, stirring until smooth.
  6. Pour the melted chocolate over the oat mixture and spread it evenly with a spatula.
  7. Refrigerate for at least 2 hours to allow bars to set.
  8. Once set, cut into desired pieces and enjoy. Store leftovers at room temperature or in the fridge.

Notes

  • Add-ins: Try adding mini marshmallows, dried fruit, or chocolate chunks for extra flavor.
  • Sweetener swap: Replace honey with maple syrup or agave nectar.
  • Vegan option: Use dairy-free chocolate chips and plant-based butter.
