3 cups (660g) peanut butter, smooth
1 cup (320g) honey

1 tsp vanilla extract
4 cups (480g) quick oats
2 cups (320g) semi-sweet chocolate chips
2 1/2 tbsp (35g) unsalted butter

- Remove from heat, stir in vanilla extract, and then add oats, mixing until fully combined.
- Pour the mixture into the prepared pan. Spread evenly with a spatula, being careful not to press too hard.
- In a microwave-safe bowl, combine chocolate chips and butter. Heat in 30-second intervals, stirring until smooth.
- Pour the melted chocolate over the oat mixture and spread it evenly with a spatula.
- Refrigerate for at least 2 hours to allow bars to set.
- Once set, cut into desired pieces and enjoy. Store leftovers at room temperature or in the fridge.
