Ingredients

1 tablespoon olive oil

1 small onion, chopped

2 chicken breasts, cut into small cubes

1/4 teaspoon salt

1/4 teaspoon black pepper

4 cloves garlic, minced

3/4 cup rice, uncooked

10 ounces cream of chicken soup (1 can)

2 cups chicken broth (low sodium)

2 cups broccoli florets

1 cup cheddar cheese

1 tablespoon fresh parsley, chopped


Instructions

  1. Heat olive oil in a large oven-proof skillet over medium heat. Add chopped onion and cubed chicken, cooking until the chicken is no longer pink and lightly browned, about 5 minutes. Season with salt and pepper, then stir in minced garlic and cook for another 30 seconds.
  2. Stir in the rice, cream of chicken soup, and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until the rice is fully cooked. Stir occasionally, adding more broth if needed.
  3. Add broccoli florets and half of the cheddar cheese. Cook for an additional 2 minutes until the broccoli softens slightly. Sprinkle the remaining cheese on top and place the skillet under the broiler for 2-3 minutes to melt and lightly brown the cheese.
  4. Garnish with fresh parsley and serve immediately.
