Description

A creamy, comforting one-pot Chicken Alfredo recipe featuring tender diced chicken, perfectly cooked pasta, and a rich homemade Alfredo sauce made from parmesan, garlic, and cream. This quick and easy stovetop dish combines savory flavors and creamy textures for a satisfying family meal.

Ingredients

Chicken and Seasonings

  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • Salt & pepper to taste

Liquid and Dairy

  • 2 cups chicken broth
  • 1 cup milk or cream
  • ¾ cup parmesan cheese

Pasta

  • 8 oz fettuccine or penne pasta

Garnish

  • Parsley for garnish

Instructions

  1. Cook the Chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken breasts and cook until browned on all sides and cooked through, about 5-7 minutes.
  2. Add Garlic: Stir in the minced garlic and sauté briefly for about 1 minute, until fragrant, being careful not to let it burn.
  3. Add Liquids and Pasta: Pour in the chicken broth and milk or cream, then add the uncooked pasta. Stir to combine and make sure pasta is submerged in liquid.
  4. Simmer the Pasta: Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  5. Finish with Parmesan and Seasoning: Stir in the parmesan cheese until melted and the sauce is creamy. Season with salt and freshly ground black pepper to taste.
  6. Garnish and Serve: Sprinkle chopped parsley over the top and serve the Chicken Alfredo hot for a delicious, comforting meal.

Notes

  • Add broccoli or peas to the pot along with the pasta for extra vegetables and color.
  • Use whole wheat pasta as a substitute for extra fiber and a healthier option.
  • For a richer sauce, substitute half or all of the milk with heavy cream.
  • To reduce calories, use low-fat milk and less parmesan.
  • Leftovers reheat well on the stovetop or in the microwave with a splash of milk to loosen the sauce.
