Description

This One-Pot Mushroom Rice combines earthy mushrooms, aromatic spices, and fluffy rice in a simple and comforting dish. Perfect for busy nights, this easy recipe delivers big flavor with minimal effort, ideal for serving as a side or light main course.

Ingredients

Main Ingredients:

  • 1 cup long-grain white rice (or basmati for added aroma)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups cremini or button mushrooms, sliced
  • 2 cups vegetable broth (or chicken broth if preferred)

Seasonings:

  • 1 teaspoon soy sauce (optional, for added umami)
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Chopped parsley for garnish

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Prepare the Aromatics and Mushrooms: Chop the onion, mince the garlic, and slice the mushrooms.
  3. Sauté the Aromatics and Mushrooms: Heat olive oil in a large skillet or pot over medium heat. Add the onion and sauté for 3-4 minutes until translucent. Stir in the garlic and cook for another minute. Add the sliced mushrooms and cook for 5-6 minutes until they release moisture and turn golden brown.
  4. Add Spices and Rice: Stir in thyme, paprika, salt, and pepper. Add the rinsed rice and stir it into the mushroom mixture, toasting it slightly for 1-2 minutes.
  5. Add the Broth: Pour in the vegetable broth and soy sauce (if using). Stir gently, bring to a boil.
  6. Simmer the Rice: Reduce heat to low, cover, and simmer for 15-18 minutes. Avoid lifting the lid during cooking to ensure the rice cooks evenly.
  7. Let the Rice Steam: Once cooked, turn off the heat and let the rice sit, covered, for 5 minutes.
  8. Fluff and Garnish: Fluff the rice with a fork and sprinkle with chopped parsley. Serve immediately.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat with a splash of broth or water to keep the rice moist.
