Description
A bright and festive quick bread featuring tart fresh cranberries, zesty orange, and sweet chocolate chips, perfect for holiday breakfasts or as a delightful dessert.
Ingredients
Dry Ingredients
- 1½ cups all-purpose flour
- ¾ cup sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tbsp orange zest
Wet Ingredients
- ½ cup orange juice
- ½ cup milk
- 1 large egg
- ¼ cup melted butter
Add-ins
- 1 cup fresh cranberries
- ½ cup white or dark chocolate chips
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a standard loaf pan thoroughly to prevent sticking and set aside.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest until evenly combined.
- Combine Wet Ingredients: In a separate bowl, whisk together the orange juice, milk, egg, and melted butter until the mixture is smooth and homogenous.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix gently until just combined; be careful not to overmix to keep the bread tender.
- Fold in Add-ins: Toss the fresh cranberries in a tablespoon of flour to prevent sinking, then fold them along with the chocolate chips into the batter evenly.
- Bake: Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
- Cool and Slice: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
Notes
- Toss cranberries in flour before adding to batter to keep them from sinking.
- For extra sweetness and flavor, drizzle the cooled bread with an orange glaze made from powdered sugar and fresh orange juice.
