Description

Parmesan Crusted Potatoes are the ultimate side dish—golden and crispy on the outside, tender on the inside. Ingredients

1.5 lbs baby gold or Yukon gold potatoes (about 1012 small potatoes)

3/4 cup grated Parmesan cheese

2 tablespoons olive oil or melted butter

1 teaspoon garlic powder

Salt and black pepper to taste

1 tablespoon chopped parsley (optional, for garnish)


Instructions

Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Slice the Potatoes:
Slice the potatoes in half lengthwise. If desired, score the cut sides with a knife to help the crust adhere better.

Prepare the Parmesan Coating:
In a bowl, combine Parmesan cheese, garlic powder, salt, and pepper. Spread this mixture evenly on the prepared baking sheet.

Prepare the Potatoes:
Brush the cut sides of the potatoes with olive oil or melted butter. Place the potatoes cut-side down on the Parmesan mixture on the baking sheet.

Bake:
Bake for 25–30 minutes, or until the potatoes are fork-tender and the crust is golden brown.

Serve:
Let the potatoes cool slightly before removing them from the tray. Garnish with chopped parsley and extra Parmesan cheese, if desired.

Notes

Variation: You can also add a pinch of red pepper flakes for a little heat.

Storage: Leftover potatoes can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore their crispiness.
