Ingredients
Potatoes
- 3 cups potatoes, cubed
- 2 tbsp olive oil
- ½ tsp paprika
- Pinch of cayenne pepper
- Salt to taste
Bravas Sauce
- ½ cup tomato sauce
- 1 tsp smoked paprika
- 1 tsp vinegar (preferably sherry or white wine vinegar)
Garlic Aioli
- ¼ cup mayonnaise
- 1 clove garlic, crushed
Instructions
- Prepare the Potatoes: Toss the cubed potatoes with olive oil, ½ teaspoon paprika, a pinch of cayenne pepper, and salt until evenly coated.
- Roast the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in a preheated oven at 425°F (220°C) for 25 to 30 minutes, turning halfway through, until they are golden brown and crispy on the outside and tender inside.
- Make the Bravas Sauce: While the potatoes roast, combine the tomato sauce, smoked paprika, and vinegar in a small pan. Simmer over medium heat for about 5 minutes, stirring occasionally to blend the flavors and slightly thicken the sauce.
- Prepare the Garlic Aioli: In a small bowl, mix together the mayonnaise and crushed garlic until smooth and fragrant.
- Assemble and Serve: Once the potatoes are roasted, transfer them to a serving dish and spoon the warm bravas sauce generously over the top. Drizzle or dollop the garlic aioli over everything. Serve immediately for the best crispy texture and flavor.

- An air fryer can be used instead of an oven for extra crispiness; cook at 400°F for 20-25 minutes, shaking halfway through.
- Adjust the amount of cayenne pepper to control the heat level to your taste.
