Ingredients

Potatoes

  • 3 cups potatoes, cubed
  • 2 tbsp olive oil

  • Salt to taste

Bravas Sauce

  • ½ cup tomato sauce
  • 1 tsp smoked paprika
  • 1 tsp vinegar (preferably sherry or white wine vinegar)

Garlic Aioli

  • ¼ cup mayonnaise
  • 1 clove garlic, crushed


Instructions

  1. Prepare the Potatoes: Toss the cubed potatoes with olive oil, ½ teaspoon paprika, a pinch of cayenne pepper, and salt until evenly coated.
  2. Roast the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in a preheated oven at 425°F (220°C) for 25 to 30 minutes, turning halfway through, until they are golden brown and crispy on the outside and tender inside.
  3. Make the Bravas Sauce: While the potatoes roast, combine the tomato sauce, smoked paprika, and vinegar in a small pan. Simmer over medium heat for about 5 minutes, stirring occasionally to blend the flavors and slightly thicken the sauce.
  4. Prepare the Garlic Aioli: In a small bowl, mix together the mayonnaise and crushed garlic until smooth and fragrant.
  5. Assemble and Serve: Once the potatoes are roasted, transfer them to a serving dish and spoon the warm bravas sauce generously over the top. Drizzle or dollop the garlic aioli over everything. Serve immediately for the best crispy texture and flavor.
