Description
Soft, moist peach bread made with fresh or canned peaches, offering a sweet and fruity flavor perfect for summer mornings or brunch.
Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- ¾ cup sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- Pinch of salt
Wet Ingredients
- 2 eggs
- ½ cup milk
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup diced peaches (fresh or canned, drained if canned)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking during baking.
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and a pinch of salt. Stir well to evenly distribute all dry components.
- Prepare Wet Ingredients: In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth. Then gently fold in the diced peaches to incorporate without breaking them down.
- Combine and Pour: Gradually add the dry mixture to the wet ingredients, stirring just until combined. Be careful not to overmix to keep the bread tender. Pour the batter evenly into the prepared loaf pan.
- Bake: Place the loaf pan in the preheated oven and bake for 50 to 55 minutes. Check doneness by inserting a toothpick into the center of the bread; it should come out clean when the bread is fully baked.
Notes
- For extra sweetness, drizzle the cooled bread with a simple vanilla glaze made from powdered sugar and vanilla extract.
- Use canned peaches, drained well, if fresh peaches are out of season to maintain flavor and moisture.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, which helps preserve moisture.
