Ingredients
For the Peach Mousse:
1 lb ripe peaches, peeled, diced
2 Tbsp fresh lemon juice
1/4 cup cold water
1 Tbsp unflavored gelatin (Knox brand recommended)
1/3 cup granulated sugar
1 cup heavy whipping cream
For the Garnish/Peach Topping:
1 ripe peach, peeled and thinly sliced
1 Tbsp fresh lemon juice
2 Tbsp granulated sugar
Mint leaves (optional)
Instructions
- Prepare the peach puree: Peel and dice the peaches (you should have 3 cups diced). Transfer to a blender or food processor and add 2 tablespoons of lemon juice to prevent discoloration. Blend until smooth. Keep the puree in the blender until ready to use.
- Make the gelatin mixture: In a small saucepan (off the heat), combine 1/4 cup cold water with 1 tablespoon of gelatin. Let it sit for 5 minutes to soften. After that, stir in 1/3 cup sugar and place the saucepan over medium heat. Stir the mixture until the sugar dissolves (about 1-2 minutes), then remove from heat. Do not overcook.
- Combine with the peach puree: Add the gelatin mixture to the peach puree in the blender and blend until well combined. Cover and refrigerate for about 2 hours or until the mixture begins to thicken.
- Whip the cream: Once the peach mixture starts to thicken, whip 1 cup of heavy whipping cream until stiff peaks form.
- Fold the cream into the peach mixture: Gently fold the whipped cream into the peach puree until smooth and well combined.
- Assemble the mousse: Divide the peach mousse evenly among 6 ramekins or serving glasses. Refrigerate until the mousse is fully set.
- Prepare the topping: In a small saucepan, combine sliced peaches, 2 tablespoons sugar, and 1 tablespoon lemon juice. Cook over medium-high heat, stirring to dissolve the sugar. Bring to a boil and simmer for 2 minutes. Remove from heat and allow to cool completely.
- Serve: Spoon the cooled peach topping over the mousse. Garnish with mint leaves, if desired, and serve chilled.
Notes
- Besides raspberries, you can try other fruits like strawberries or blueberries to complement the chocolate mousse.
- For a more intense chocolate flavor, consider using dark chocolate in place of the cocoa powder in the chocolate jello.
