Ingredients
1 cup creamy peanut butter (or almond butter)
½ cup protein powder (vanilla or chocolate)
½ cup old-fashioned oats (or oat flour)
¼ cup honey or maple syrup
1 large egg
½ teaspoon baking soda
½ teaspoon vanilla extract
Pinch of salt
Optional Mix-ins:
¼ cup chocolate chips or chopped nuts
1 tablespoon chia seeds or flaxseeds
Instructions
Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix wet ingredients: In a large bowl, combine the peanut butter, honey (or maple syrup), egg, and vanilla extract. Stir until smooth.
Add dry ingredients: Stir in the protein powder, oats, baking soda, and salt. Mix until a soft dough forms. If the dough is too dry, add a little milk or water. If it’s too sticky, add extra oats.
