Sweet ripe peaches, whipped ricotta, and fresh thyme come together on toasted baguette slices in this elegant yet easy appetizer. Light, creamy, and packed with flavor — perfect for summer entertaining or a quick gourmet bite.


Ingredients

4 ripe peaches, diced

1 tablespoon lemon juice

1 tablespoon honey

1 teaspoon fresh thyme leaves (plus extra for garnish)

8 ounces ricotta cheese

1 tablespoon olive oil

1 French baguette, sliced into ½-inch rounds

Salt and pepper to taste


Instructions

Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush one side with olive oil.

Bake for 5–7 minutes until golden and crispy. Remove from oven and let cool slightly.

In a bowl, combine diced peaches, lemon juice, honey, thyme, salt, and pepper. Toss gently and let sit for 10 minutes.

In another bowl, whip ricotta until smooth and creamy using a hand mixer or fork.

Spread whipped ricotta on each toasted baguette slice.

Top with the peach mixture and garnish with additional thyme if desired.
