Ingredients
1 package (16-20 oz) refrigerated cheese ravioli
1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
1 cup tomatoes, diced
Salt and pepper to taste
Fresh herbs (basil or thyme), for garnish
Olive oil, for drizzling (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions, about 3-5 minutes. Drain the ravioli, reserving a little pasta water.
- While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add asparagus and sauté for 3-4 minutes until tender but vibrant in color.
- Add minced garlic to the skillet with asparagus and cook for another minute until fragrant.
- Stir in diced tomatoes and cook for 2-3 minutes until softened.
- Add the cooked ravioli to the skillet and toss gently to combine with vegetables. Add a splash of reserved pasta water to coat the ravioli and create a light sauce if needed.
- Season with salt and pepper. Garnish with fresh herbs like basil or thyme, and drizzle with olive oil if desired. Serve immediately.
