Description

Ingredients

1 package (16-20 oz) refrigerated cheese ravioli

1 bunch fresh asparagus, trimmed and cut into 2-inch pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 cup tomatoes, diced

Salt and pepper to taste

Fresh herbs (basil or thyme), for garnish

Olive oil, for drizzling (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions, about 3-5 minutes. Drain the ravioli, reserving a little pasta water.
  2. While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add asparagus and sauté for 3-4 minutes until tender but vibrant in color.
  3. Add minced garlic to the skillet with asparagus and cook for another minute until fragrant.
  4. Stir in diced tomatoes and cook for 2-3 minutes until softened.
  5. Add the cooked ravioli to the skillet and toss gently to combine with vegetables. Add a splash of reserved pasta water to coat the ravioli and create a light sauce if needed.
  6. Season with salt and pepper. Garnish with fresh herbs like basil or thyme, and drizzle with olive oil if desired. Serve immediately.
