Description

Reuben Dip in a Rye Bread Bowl is a crowd-pleasing, creamy, and cheesy appetizer that combines all the classic flavors of a Reuben sandwich. The savory corned beef, tangy sauerkraut, and Swiss cheese meld together in a rich, baked dip served in a hollowed-out rye bread bowl.

Ingredients

1 round rye bread loaf

8 oz cream cheese, softened

1 cup shredded Swiss cheese

1 cup cooked corned beef, chopped

1/2 cup sauerkraut, drained

1/4 cup Thousand Island dressing

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the top off the rye bread loaf and hollow out the center, leaving a sturdy shell. Cut the removed bread into bite-sized pieces for dipping.
  2. In a large mixing bowl, combine the cream cheese, shredded Swiss cheese, chopped corned beef, sauerkraut, Thousand Island dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Spoon the dip mixture into the hollowed-out rye bread bowl, packing it in gently.
  4. Place the filled bread bowl on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly.
  5. Remove from the oven and serve the dip warm with the reserved bread pieces, crackers, or veggies for dipping.

Notes

  • Add More Cheese: You can experiment with different types of cheese, such as mozzarella or cheddar, to create your own twist on this dip.
  • Spicy Reuben Dip: Add a dash of hot sauce or red pepper flakes to give the dip an extra kick.
  • Vegetarian Version: Omit the corned beef and add more veggies such as mushrooms or bell peppers for a vegetarian-friendly version of this dip.
  • Storage: Store any leftover dip in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat the dip in the oven at 350°F (175°C) for 10-15 minutes, or until warm. You can also microwave it in intervals, stirring occasionally, until heated through.
