Description

Ingredients

For the white chocolate mousse: 2 egg yolks, 2 tablespoons granulated sugar, 1 cup heavy cream, 80 grams white chocolate

For the pastry: 350 grams all-purpose flour, 125 grams unsalted butter, 125 grams sugar, 2 eggs plus 1 egg yolk, pinch of salt, 1/4 teaspoon cayenne pepper, 1/4 teaspoon cinnamon

To Serve: Salted caramel sauce (optional)


Instructions

  1. Step 1: Prepare the White Chocolate Mousse Base: Beat egg yolks and sugar until pale and smooth. Heat ¼ cup of cream in a double boiler until warm. Pour this over the egg yolk mixture and cook until thickened. Stir in the broken white chocolate and allow to cool.
  2. Step 2: Whip the Cream and Combine: Whip the remaining cream to stiff peaks. Gently fold the whipped cream into the cooled chocolate and egg mixture until fully combined. Refrigerate until ready to use.
  3. Step 3: Preheat and Prepare Pastry Dough: Preheat oven to 190ºC (374ºF). Combine flour, salt, cayenne pepper, and cinnamon in a food processor. Add cold butter and pulse until fine breadcrumbs form. Add sugar, eggs, and egg yolk, pulsing until dough comes together. Refrigerate for 1 hour.
  4. Step 4: Roll Out Pastry: Roll out the chilled dough and cut to fit tartlet tins or muffin trays. Blind bake with baking paper and weights for 10 minutes, then remove the paper and bake for another 5 minutes until golden. Cool on a wire rack.
  5. Step 5: Assemble and Serve: Spoon the white chocolate mousse into the cooled pastry shells. Optionally, decorate with fresh fruit or drizzle with salted caramel sauce. Serve chilled or at room temperature.
