Description

Roasted garlic aioli is a creamy, flavorful sauce made with roasted garlic, mayonnaise, lemon juice, and Dijon mustard. It’s perfect as a dip, spread, or sauce for meats and seafood, adding a rich, zesty twist to your dishes.


Ingredients

1 head of garlic

1 cup mayonnaise

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (optional, for a richer flavor)

Fresh herbs (like parsley or chives, for garnish, optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel away the outer layers of the garlic head, keeping the cloves intact. Cut about 1/4 inch off the top of the garlic head to expose the cloves.
  3. Drizzle olive oil over the exposed cloves. Wrap the garlic head in aluminum foil tightly.
  4. Roast in the preheated oven for 30-35 minutes, until the cloves are soft and golden brown. Remove from the oven and let cool for a few minutes before unwrapping.
  5. Squeeze the roasted garlic cloves into a small bowl to create a smooth paste.
  6. In a medium mixing bowl, combine mayonnaise, roasted garlic paste, lemon juice, Dijon mustard, salt, and black pepper. Whisk until well combined.
  7. If desired, drizzle in olive oil while whisking for a richer flavor. Taste and adjust seasoning as needed.
  8. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow flavors to meld.
  9. Stir the aioli before serving and garnish with fresh herbs if desired.
  10. Serve as a dip for vegetables, a spread for sandwiches, or a sauce for grilled meats and seafood.
