Description
This Rosemary Apple Cider Chicken recipe features juicy chicken breasts glazed with a sweet and fragrant sauce made from apple cider, Dijon mustard, honey, and fresh rosemary. It’s a cozy, fall-inspired dish perfect for a comforting dinner.
Ingredients
Chicken
- 1 tbsp olive oil
- 4 chicken breasts
- Salt & pepper, to taste
Glaze
- 1 cup apple cider
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp fresh rosemary, chopped
Instructions
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
- Make Glaze: In the same skillet, add apple cider, Dijon mustard, honey, and fresh rosemary. Stir to combine and bring the mixture to a simmer over medium heat. Let it simmer for 5 minutes to reduce slightly and develop flavor.
- Cook Chicken in Glaze: Return the seared chicken breasts to the skillet. Spoon the glaze over the chicken, cover, and cook for an additional 10-15 minutes or until the chicken is cooked through and tender, and the glaze has thickened to coat the chicken.
Notes
- For a complete meal, pair this dish with creamy mashed sweet potatoes.
- You can use fresh or dried rosemary, but fresh will provide a more vibrant flavor.
- If apple cider is not available, unfiltered apple juice can be used as a substitute.
- Make sure not to overcook the chicken to keep it juicy and tender.
