Ingredients

For the Shrimp Scampi:

1 lb large shrimp (peeled and deveined)

4 tbsp unsalted butter, divided

2 tbsp olive oil

4 garlic cloves, minced

¼ cup chicken broth

2 tbsp freshly squeezed lemon juice

¼ tsp red pepper flakes (optional)

2 tbsp chopped fresh parsley, plus more for garnish

Salt and pepper to taste

For the Garlic Bread:

4 thick slices of French or Italian bread

Garlic butter (made by mixing softened butter with minced garlic and parsley)


Instructions

1. Prepare the Garlic Bread:

Preheat the oven to 375°F (190°C).

Spread garlic butter generously on each slice of bread and arrange them on a baking sheet.

Bake for 8-10 minutes or until golden and toasted. Set aside.

2. Cook the Shrimp:

Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.

Add the minced garlic and sauté for 1-2 minutes until fragrant.

Season the shrimp with salt and pepper, then add them to the skillet in a single layer.

Cook shrimp for 2-3 minutes per side, until pink and opaque. Remove from the skillet and set aside.

3. Make the Sauce:

In the same skillet, add 1 tbsp butter and pour in the chicken broth. Let it simmer for 1-2 minutes.

Stir in the lemon juice, red pepper flakes (if using), and the remaining butter. Mix until smooth and well combined.

4. Combine and Serve:

Return the cooked shrimp to the skillet and toss to coat them in the sauce.

Sprinkle with fresh parsley and stir gently.

Divide the shrimp and sauce into bowls and serve with the warm garlic bread on the side. Enjoy!
