Ingredients
Frittata Base
- 1 cup JUST Egg
- ¼ cup dairy-free cheese (optional)
Vegetables
- ½ cup chopped spinach
- ¼ cup bell pepper, diced
- 2 tbsp onion, chopped
Seasoning
- Salt & pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375 °F (190 °C) to prepare for baking the frittata.
- Sauté Vegetables: In a skillet over medium heat, sauté the chopped spinach, bell pepper, and onion for about 3 minutes until they become soft and fragrant.
- Combine JUST Egg: Pour 1 cup of JUST Egg into the skillet with the sautéed vegetables and stir gently to combine all ingredients evenly.
- Transfer and Bake: Pour the mixture into a baking dish or muffin tins if meal prepping, then bake in the preheated oven for 15–18 minutes until the frittata is fully set and slightly golden on top.
- Cool and Serve: Let the frittata cool for a few minutes before slicing and serving. Season with salt and pepper to taste.
