Ingredients

Frittata Base

  • 1 cup JUST Egg
  • ¼ cup dairy-free cheese (optional)

Vegetables

  • ½ cup chopped spinach
  • ¼ cup bell pepper, diced
  • 2 tbsp onion, chopped

Seasoning

  • Salt & pepper to taste


Instructions

  1. Preheat Oven: Preheat your oven to 375 °F (190 °C) to prepare for baking the frittata.
  2. Sauté Vegetables: In a skillet over medium heat, sauté the chopped spinach, bell pepper, and onion for about 3 minutes until they become soft and fragrant.
  3. Combine JUST Egg: Pour 1 cup of JUST Egg into the skillet with the sautéed vegetables and stir gently to combine all ingredients evenly.
  4. Transfer and Bake: Pour the mixture into a baking dish or muffin tins if meal prepping, then bake in the preheated oven for 15–18 minutes until the frittata is fully set and slightly golden on top.
