Ingredients
Beef and Vegetables
- 2 lb beef stew meat or sirloin tips
- 1 onion, sliced
- 2 carrots, chopped
- 2 cups potatoes or turnips, diced
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
Broth and Seasonings
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Prepare Ingredients: Gather all ingredients including beef stew meat, sliced onion, chopped carrots, diced potatoes or turnips, sliced mushrooms, and minced garlic.
- Add to Slow Cooker: Place the beef tips and all vegetables into the slow cooker. Pour in the beef broth and add Worcestershire sauce, thyme, paprika, salt, and pepper. Stir gently to combine all the ingredients evenly.
- Cook: Cover the slow cooker and cook on low heat for 7–8 hours, or on high heat for 4–5 hours, until the beef is tender and vegetables are cooked through.
- Optional Gravy Thickening: If desired, create a slurry by mixing cornstarch with a small amount of cold water. Stir the slurry into the slow cooker in the last 15-30 minutes of cooking to thicken the gravy, then cook until the desired consistency is reached.
- Serve: Once cooked, serve the beef tips and vegetables hot, spooning the rich gravy over the top for a comforting meal.
Notes
- Turnips can replace potatoes for a lower-carb option.
- Add green beans or other favorite vegetables for extra variety and nutrients.
- Check the beef broth to ensure it is gluten-free if needed for allergy considerations.
- For a thicker gravy without cornstarch, cook uncovered during the last 30 minutes to reduce the liquid.
