Ingredients
1 cup (240ml) whole milk, warmed to about 110°F (43°C)
2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 tablespoons granulated sugar, divided
1 large egg
1/4 cup (4 tablespoons; 56g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour (spooned & leveled)
Optional topping: 2 tablespoons (28g) melted unsalted butter mixed with 1 tablespoon honey
Instructions
- In the bowl of a stand mixer, whisk together the warm milk, yeast, and 1 tablespoon of sugar. Cover and let sit for 5 minutes until frothy.
- Add the remaining sugar, egg, butter, salt, and 1 cup of flour to the yeast mixture. Beat on low for 30 seconds, then add the remaining flour. Beat on medium speed for about 2 minutes, until the dough forms and pulls away from the bowl sides. If the dough is too wet, add more flour, one tablespoon at a time.
- Knead the dough for 5 minutes using a stand mixer or by hand on a floured surface. Add flour as needed but avoid adding too much. The dough should be soft and slightly tacky.
- Grease a large bowl with oil and place the dough inside, turning to coat. Cover with plastic wrap and let rise in a warm spot for 1-2 hours, until doubled in size.
- Punch down the dough, divide into 14-16 equal pieces, and shape each into a smooth ball. Place in a greased 9×13-inch pan or two 9-inch round pans.
- Cover with plastic wrap and let the rolls rise for 1 hour, until puffy.
- Preheat the oven to 350°F (177°C). Bake the rolls for 20-25 minutes, rotating the pan halfway through, until golden brown.
- Optional: Brush the baked rolls with melted butter mixed with honey. Let cool for a few minutes before serving.
Notes
- For a savory version, add dried rosemary, thyme, or garlic powder to the dough.
- For sweeter rolls, increase the sugar or add cinnamon.
- Whole wheat flour can be used for a denser, nuttier flavor.
- These rolls freeze well. Freeze before the second rise and bake when needed.
