Ingredients

Beef and Vegetables

  • 2 lb beef chuck, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced

Liquids and Tomatoes

  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 2 tbsp tomato paste

Spices and Seasonings

  • 12 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp salt
  • 1/2 tsp black pepper

  • 2 tbsp oil (vegetable or olive oil)


Instructions

  1. Brown the Beef: Heat 2 tablespoons of oil in a large pot over medium-high heat. Add the cubed beef chuck and brown it on all sides to develop deep flavor. Remove the browned beef from the pot and set it aside.
  2. Sauté Vegetables: In the same pot, add the diced onion, sliced carrots, celery, and minced garlic. Sauté for 3 to 5 minutes until the vegetables begin to soften and the onion turns translucent.
  3. Add Tomato Paste and Spices: Stir in the tomato paste along with the chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Cook this mixture for about 1 minute to allow the spices to bloom and the tomato paste to deepen in flavor.
  4. Add Tomatoes, Broth, and Beef: Pour in the canned diced tomatoes and beef broth, then return the browned beef cubes to the pot. Stir everything together ensuring the beef is submerged in the liquid.
  5. Simmer Until Tender: Bring the stew to a gentle simmer. Reduce the heat to low, cover, and let it simmer for 2 hours, stirring occasionally. Cook until the beef is tender and the flavors meld beautifully.
