Ingredients
Beef and Vegetables
- 2 lb beef chuck, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
Liquids and Tomatoes
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 2 tbsp tomato paste
Spices and Seasonings
- 1–2 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 1 tsp salt
- 1/2 tsp black pepper
Other
- 2 tbsp oil (vegetable or olive oil)
Instructions
- Brown the Beef: Heat 2 tablespoons of oil in a large pot over medium-high heat. Add the cubed beef chuck and brown it on all sides to develop deep flavor. Remove the browned beef from the pot and set it aside.
- Sauté Vegetables: In the same pot, add the diced onion, sliced carrots, celery, and minced garlic. Sauté for 3 to 5 minutes until the vegetables begin to soften and the onion turns translucent.
- Add Tomato Paste and Spices: Stir in the tomato paste along with the chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Cook this mixture for about 1 minute to allow the spices to bloom and the tomato paste to deepen in flavor.
- Add Tomatoes, Broth, and Beef: Pour in the canned diced tomatoes and beef broth, then return the browned beef cubes to the pot. Stir everything together ensuring the beef is submerged in the liquid.
- Simmer Until Tender: Bring the stew to a gentle simmer. Reduce the heat to low, cover, and let it simmer for 2 hours, stirring occasionally. Cook until the beef is tender and the flavors meld beautifully.

- For a fuller stew, add diced potatoes or turnips along with vegetables.
- Adjust the heat by reducing the cayenne pepper for a milder flavor.
