Beef and Broth
- 2 pounds beef stew meat
- 1 cup beef broth
Vegetables
- 1 onion, diced
- 2 potatoes, cubed

- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Begin by dicing the onion, cubing the potatoes, and slicing the carrots. Open the can of diced tomatoes and have all spices and beef broth ready.
- Combine in Slow Cooker: Place the beef stew meat, diced onion, cubed potatoes, sliced carrots, diced tomatoes (with juices), and beef broth into the slow cooker. Sprinkle the chili powder, cumin, salt, and pepper evenly over the ingredients.
- Cook: Cover the slow cooker and cook the stew on low heat for 7-8 hours or on high heat for 4-5 hours, allowing the flavors to meld and the beef to become tender.
- Finish and Serve: Once cooked, either shred the beef slightly for a more uniform texture or serve the chunks as is with the broth. Taste and adjust seasoning if necessary before serving.
