Ingredients
Chickpeas
- 2 (15-oz) cans chickpeas, drained and rinsed
Seasoning & Oil
- 1½ tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (adjust to taste)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Chickpeas: Drain and rinse the chickpeas thoroughly to remove excess salt and liquid. Pat them completely dry using paper towels to remove all moisture. For best results and extra crispiness, remove any loose skins from the chickpeas.
- Coat Chickpeas: Toss the dried chickpeas with olive oil until they are evenly coated. This helps the spices stick and promotes even roasting.
- Roast Initially: Spread the chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 25 to 30 minutes, shaking the pan halfway through to ensure even cooking on all sides.
- Add Spices: Remove the chickpeas from the oven and immediately toss them with smoked paprika, chili powder, cumin, garlic powder, cayenne pepper, salt, and black pepper until well combined and evenly coated.
- Final Roasting: Return the spiced chickpeas to the oven for an additional 5 to 10 minutes until they turn golden and achieve a crunchy texture.
